Celery Root with Orange Juice

This super healthy vegetable is mainly disliked by many people despite of its nutritional benefits. I was one of them. Many years I rejected to eat it because of its sour taste. However, one day, I ate this recipe, I finished my plate even I remember I wanted more. The secret of the recipe was orange because combination of orange taste with carrot suppressed celery’s sour taste and created very nice sweet celery dish. I also made some small changes in the original recipe like adding orange peels.

Ingredients : 

1 finely chopped onion

1 celery root

1 carrots

1 water glass orange’s juice (75% real orange juice, 25% water)

1/2 orange’s peel (finely planed)

1 tablespoon olive oil

Preparation

Wash Celery Root

Take off the skin and wash again

Cut it into small pieces (you need big and strong knife to do this)

Do the same for carrots and onions too.

Put olive oil and chopped onions into pan and stir onions until they become softer and their color turn to golden. (5-7 minutes)

Add carrot pieces and stir around 5 minutes more.

Add celery pieces, orange peels and stir again around 3 minutes

Add orange juice (water needs to be roughly 1 cm above from celeries) and put orange slices on celery pieces. Close the pan.

Cook around 20 minutes in low heat until the carrots become tender.
